Ingredients
- 2 medium zucchini, sliced
- 2 medium yellow squash, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano or Italian seasoning
- 1 tbsp lemon juice
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat grill to medium-high heat.
- Slice zucchini and yellow squash lengthwise or into thick rounds.
- In a bowl, toss vegetables with olive oil, garlic, salt, pepper, and oregano or Italian seasoning.
- Place vegetables on the grill and cook for 3–4 minutes per side until tender with grill marks.
- Remove from grill and drizzle with lemon juice.
- Garnish with fresh parsley and serve.
